Summer. About half-way complete. This thought has made me anxious; I've had many a lazy day, reading outside, sleeping in much too late, walking by the river. I've made an effort to make some summery meals, which make me feel a bit more productive. Vichysoisse with garden tomatoes and garden mint. Soooo creamy and refreshing although the butter was slightly off. I'll make this again!
Today I made Shutterbean's Corn Zucchini Lime Pizza (with cilantro, jalapenos, and red onion). Yum! I used a no-yeast crust which was only okay- not quite cooked in the middle. The cilantro got a bit charred. But still very good.
Happy accomplishments of the summer so far: consistent exercise. Yeah! Lots of book-reading. Lots of vitamin D. Less asthma anxiety. A wee bit of boredom (necessary). A few glorious night-time swims, complete with flashing colored underwater disco balls. A new white ModCloth swimsuit! Multiple drive-in movie nights. Now, how to make the MOST of the last five weeks?
